Making these delicious beasts:

CHOCOLATE PEANUT BUTTER CUP COOKIES
2 ¼ cups all purpose flour
1/3 cup unsweetened cocoa powder
1 t. baking soda
½ t. salt    
1 cup butter or margarine (softened)
¾ cup smooth peanut butter 
¾ cup light brown sugar, packed
¾ cup granulated sugar
1 t. vanilla extract
2 large eggs
5, 2oz packages of peanut butter cups, cut into about 8 pieces (10 oz of little ones will do too, cut into about 4 pieces)
1, 6oz package of semisweet chocolate chips
                                         
Heat oven to 350°F. In medium sized bowl, combine flour, cocoa powder, baking soda, and salt, set aside. In large electric mixer bowl at medium speed, beat butter, peanut butter, brown sugar, granulated sugar, and vanilla about 3 minutes or until light and fluffy. Add eggs, one at a time, beat until thoroughly blended after each addition. Reduce speed to low, gradually beat in flour mixture until smooth. Stir in peanut butter cup pieces and chocolate chips into dough. Drop small balls of dough (about 2 t. or so) onto un-greased cookie sheet, spaced about 1 inch apart. Bake until dry and slightly firm to the touch, 8-10 minutes for medium sized cookies, 13-15 for giant sized cookies. Let cookies cool for a minute or two on the cookie sheet. Remove to wire rack to let cool completely. 
Note: This recipe makes a TON of cookies (4 dozen or more, depending on size). I like to make a few and freeze the balls of dough to use later. This would be great for a bake sale!! YUMMMMMYY!!!!!
